Crunchy crumble and lemon mousse create a delicious combination that will sweeten any New Year’s Eve party!
Ingredients
Lemon mousse
- Sugar: 100 g
- Grated lemon zest: 1 tablespoon
- Lemon juice: 50 ml
- Water: 30 ml
- Gelatin: 15 g
- Sparkling wine: 300 ml
Lemon-almond crumble
- Powdered sugar: 80 g
- Butter: 100 g
- Almond flour: 50 g
- Grated lemon zest: 2 tablespoons
- Wheat flour: 60 g
Preparation
Step 1: Prepare the lemon-almond crumble
Mix all the ingredients in a bowl with your hands to form clumps. Spread them on a baking sheet and bake in an oven preheated to 180°C until golden brown.
Step 2: Make the lemon foam
Soak the gelatin in water. Boil the sparkling wine, lemon juice and zest, and sugar in a pot until the sugar dissolves. Then add the soaked gelatin, stir, and wait until it dissolves again. Set aside to cool.
Once the mixture cools, place it in the refrigerator to set completely (it should turn into a jelly). Transfer the set jelly to a mixer and whip at high speed until it becomes fluffy foam.
Step 3: Assemble the dessert
Sprinkle the baked and cooled crumble at the bottom of glasses or jars. Then add the lemon foam and sprinkle with more crumble. The dessert can also be decorated with fruits like raspberries or blackberries, mint leaves, and chocolate decorations.
