White chocolate mousse

This recipe is perfect if you are looking for a very elegant dessert. This mousse is always suitable for lavish parties and formal events.

Ingredients:

  • 12 ounces white baking chocolate, roughly chopped
  • 2 cups heavy cream, divided
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • mixed fresh berries (optional, for decoration)

Method:

Place the chopped white chocolate in a heatproof bowl.

In a saucepan, heat 1 cup of heavy cream over a medium heat until just simmering, but do not let it boil.

Pour the hot cream over the chopped white chocolate. Let stand for a minute to soften the chocolate.

Stir the chocolate and cream mixture until the chocolate is completely melted and smooth. Allow to cool to room temperature.

In a mixing bowl, beat the remaining 1 cup heavy cream with the icing sugar and vanilla extract until stiff peaks form.

Gently fold the whipped cream into the cooled white chocolate mixture until well combined and smooth.

Spoon the mousse into serving glasses or bowls. Cover and chill for at least 2 hours or until set.
