Mint Ice Cream Bombe

For a dessert that’s as fun to make as it is to eat, try this Mint Ice Cream Bombe. It’s a simple mix, freeze and enjoy recipe that adds a minty kick to your usual ice cream routine. So if you’re looking for a refreshing twist on dessert, this bombe has your name on it!

Ingredients:

  • 200g Arnott’s Mint Slice biscuits
  • 2L vanilla ice cream, softened
  • 2 tsp peppermint essence
  • 1/2 tsp green food colouring
  • 35g Nestlé Peppermint Crisp bar, roughly chopped
  • Mixed berries, to serve

Method:

Break the Mint Slice biscuits into small pieces. You can do this by placing them in a plastic bag and gently crushing them with a rolling pin.

In a large bowl, mix the softened vanilla ice cream with the peppermint essence and green food colouring. The mixture should be a uniform mint colour.

Fold the crushed Mint Slice biscuits and chopped Peppermint Crisp bar into the ice cream mixture.

Line a dome-shaped bowl with cling film, leaving a little overhang. Pour the ice cream mixture into the bowl and smooth the top with a spatula.

Cover with the remaining plastic wrap and freeze for at least 4 hours or until firm.

To serve, invert the bomb onto a serving platter and remove the plastic wrap. Leave for a few minutes to soften slightly, then slice and serve with fresh mixed berries on the side.
