- Flour – 175 g
- Orange juice – 250 ml
- Orange juice – 50 ml
- Salt – 1 pinch
- Cream (18%) – 125 g
- Butter – 15 g
- Egg – 1 pc.
Preparation
Step 1: Baking the Tartlets Cut the butter into cubes and quickly knead with the remaining ingredients. Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour. Then, roll out thinly to a thickness of 3 mm, sprinkling with a little flour. Line 8 greased tartlet molds (each about 10 cm in diameter) with the dough, forming an edge. Prick the dough several times with a fork, cover with baking paper, and weigh down with dried beans/peas. Bake the tartlets in a preheated oven at 200°C for 8–10 minutes.
Step 2: Baking the Cream Mix the cream ingredients with a whisk in one bowl until combined. Remove the tartlets from the oven, remove the baking paper and dried beans/peas. Spread the cream over the crusts and bake at the same temperature for another 15–18 minutes. Cool on a wire rack, then remove from the molds.
Step 3: Preparing the Glaze Peel the oranges completely, including the white skin. Cut into 8 slices and place one on each cake. Mix the sugar, powdered cake glaze, and orange juice in a pot and bring to a boil. Cool for 1 minute, then cover the cakes with a thin layer of glaze. Let cool.
