Mini lime cream rolls

A sponge roll filled with a cream prepared with mascarpone cheese and aromatic lime zest – an easy dessert that you can quickly prepare for your New Year’s guests!

Ingredients

Cream

  • Lime – 1 piece
  • Mascarpone cheese – 250 g
  • Natural yogurt – 2 tablespoons
  • Powdered sugar – 3 tablespoons

Sponge Roll

  • Potato starch – 10 g
  • Cocoa – 20 g
  • Eggs – 4 pieces
  • Wheat flour type 450 – 40 g
  • Sugar – 70 g
  • Kiwi – 1 piece
  • Strawberry – 70 g

Decorating

  • Kiwi – 10 g
  • Strawberry – 1 piece

Preparation

Beat the eggs with sugar until very fluffy. Sift the flour, cocoa, and potato starch through a sieve and add to the beaten eggs. Gently mix. Spread the mixture evenly on a baking sheet lined with parchment paper. Bake at 185°C for 10 minutes. Do not overdry the roll in the oven. Let it cool.

Level and trim the dried ends of the sponge. Cut the sponge in half. Add yogurt and powdered sugar to the mascarpone cheese. Mix. Finally, add the juice and zest from 1 lime. Mix all the ingredients together.

Spread the cream on the sponge, roll it up, and place it in the freezer for a few moments. Repeat the process with the other half of the sponge. Cut the rolls into smaller pieces. Decorate with kiwi and strawberries pierced with toothpicks.
