Mince Pie Cookies

Mince Pie Cookies combine the festive flavour of traditional mince pies with the chewy goodness of cookies. These delicious treats are perfect for holiday gatherings or any time you want a taste of Christmas in cookie form. They’re easy to make and guaranteed to be a hit with family and friends.

Ingredients:

  • 120g salted butter, softened
  • 75g golden caster sugar
  • 1 medium egg
  • 1 teaspoon vanilla extract
  • 4 tbsp (about 100g) mince (vegetarian if required)
  • 180g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 150g dark chocolate, chopped

Method:

Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.

In a large mixing bowl, cream together the softened salted butter and golden icing sugar until light and fluffy.

Whisk in the egg and vanilla extract until well combined.

Stir in the mince until evenly distributed.

Sift the plain flour, bicarbonate of soda and ground cinnamon into the bowl with the wet ingredients.

Mix until you have a dough. It should be soft and slightly sticky.

Fold in the dark chocolate chunks, making sure they are evenly distributed throughout the dough.

Using a spoon or your hands, scoop out portions of the dough and form balls about the size of a walnut. Place them on the lined baking tray, leaving space between each cookie for spreading.

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Once cooled, enjoy your delicious mince pie cookies with a cup of tea or coffee, or wrap them up for a festive gift!
