Light Rice Cookies

Delicious cookies without gluten, lactose, and… without baking! See how to prepare rice cookies!

Ingredients:

  • Dried dates – 100 g
  • Honey – 3 tablespoons
  • Oat flakes – 120 g
  • Rice (quinoa) – 120 g
  • White sesame seeds – 2 tablespoons
  • Dark chocolate – 100 g

Preparation:

Step 1: Mix the Ingredients Transfer the dates to a blender and blend until smooth. Transfer the mixture to a large bowl. Add cooked rice and oat flakes. Mix thoroughly. Add sesame seeds and honey. Mix again and set aside for 15 minutes until the mixture swells slightly.

Step 2: Shape the Cookies Form the mixture into balls, then flatten them. The cookies should have a diameter of 5-6 cm. Place the prepared cookies on a work surface.

Step 3: Decorate the Cookies with Chocolate Prepare a baking sheet lined with parchment paper. Temper the chocolate – check how to do it! Place a teaspoon of chocolate on the parchment paper. Place a cookie on top of the chocolate and press down. Repeat until the entire baking sheet is filled with cookies.

Prepare a cone from parchment paper, pour the remaining chocolate into it, and decorate the cookies with it.

Step 4: Chill the Cookies Place the prepared cookies in the refrigerator for 30-40 minutes.
