Ingredients
- all-purpose flour: 300 g
- baking powder: 2 teaspoons
- sugar: 150 g
- a pinch of salt
- grated lemon zest (only the yellow part): 2 1/2 tablespoons
- vanilla sugar: 1 packet
- eggs: 2
- yogurt, kefir, or buttermilk: 250 ml
- melted butter or vegetable oil: 125 g
Preparation
Line a muffin tin with 12 paper liners. Preheat the oven to 190°C (375°F).
In a bowl, sift the flour with the baking powder, then mix in the sugar, salt, lemon zest, and vanilla sugar.
In another bowl, whisk the eggs with the yogurt, kefir, or buttermilk, and the melted and cooled butter or vegetable oil.
Pour the wet ingredients into the dry ingredients and gently mix with a spoon until just combined.
Spoon the batter into the paper liners and bake for about 20-22 minutes.
