Ingredients:
- Sugar – 2 tbsp
- Lemons – 4
- Vanilla extract – 1 tsp
- Biscuits – 50 g
- Eggs – 2
- Natural yogurt – 300 g
- Butter – 30 g
- Honey – 2 tbsp
- Cream cheese – 100 g
- Heavy cream (30%) – 150 g
Preparation:
Step 1: Prepare Lemon Curd
- Grate the zest from one lemon. Juice all the lemons and pour the juice into a saucepan.
- Place the saucepan over low heat and add the eggs, whisking continuously.
- Stir in the honey and cook until the mixture thickens.
- Remove from heat, add the cold butter in small pieces, and mix until smooth. Allow the lemon curd to cool.
Step 2: Whip the Cream
- Whip the heavy cream until stiff peaks form.
Step 3: Mix Cheesecake Filling
- In a bowl, combine yogurt, cream cheese, sugar, and vanilla extract until smooth.
Step 4: Assemble the Dessert
- Crush the biscuits.
- In small jars, layer the crushed biscuits, lemon curd, and cheesecake filling alternately.
