Lemon Cheesecake in a Jar

A delightful cheesecake dessert in a jar with lemon curd and crushed biscuits. Perfect for a picnic or party snack.

Ingredients:

  • Sugar – 2 tbsp
  • Lemons – 4
  • Vanilla extract – 1 tsp
  • Biscuits – 50 g
  • Eggs – 2
  • Natural yogurt – 300 g
  • Butter – 30 g
  • Honey – 2 tbsp
  • Cream cheese – 100 g
  • Heavy cream (30%) – 150 g

Preparation:

Step 1: Prepare Lemon Curd

  1. Grate the zest from one lemon. Juice all the lemons and pour the juice into a saucepan.
  2. Place the saucepan over low heat and add the eggs, whisking continuously.
  3. Stir in the honey and cook until the mixture thickens.
  4. Remove from heat, add the cold butter in small pieces, and mix until smooth. Allow the lemon curd to cool.

Step 2: Whip the Cream

  1. Whip the heavy cream until stiff peaks form.

Step 3: Mix Cheesecake Filling

  1. In a bowl, combine yogurt, cream cheese, sugar, and vanilla extract until smooth.

Step 4: Assemble the Dessert

  1. Crush the biscuits.
  2. In small jars, layer the crushed biscuits, lemon curd, and cheesecake filling alternately.
  3. Top with whipped cream and a sprinkle of lemon zest.
