Lemon cake with mayonnaise is one of those unique flavor combinations that might sound a bit crazy, but once you try it, it’s hard to resist. This incredibly fluffy and moist cake with a delicate lemon and mayonnaise aroma is worth indulging in.
Ingredients:
For the Cake:
- Sugar – 200 g
- Cake flour – 130 g
- Potato starch – 120 g
- Mayonnaise – 180 g
- Oil – 15 ml
- Eggs – 3
- Lemons – 2
- Baking powder – 5 g
- Vanilla extract – 2 g
- Salt – 1.5 g
For the Mayonnaise:
- Oil – 125 ml
- Egg – 1
- Mustard – 5 g
- Lemon – 0.5
- Salt – 1.5 g
For the Glaze:
- Powdered sugar – 120 g
- Lemon juice – 20 g
- Lemon zest – a pinch
Preparation:
Mayonnaise:
Step 1: Beat the Egg Yolk Crack one egg and separate the yolk from the egg white. Place the yolk in a bowl, add mustard, lemon juice, and a pinch of salt. Mix the ingredients using a whisk.
Step 2: Add the Oil Gradually add the oil to the mixture while continuously beating to achieve a smooth emulsion.
Step 3: Continue Mixing Continue beating until the mayonnaise thickens to a creamy consistency resembling sour cream.
Step 4: Transfer Mayonnaise to a Jar Transfer the prepared mayonnaise to a jar and seal it. You can also measure and transfer the portion needed to make the cake to a bowl.
Lemon Cake:
Step 1: Beat the Eggs In a bowl, beat the eggs with sugar until very fluffy.
Step 2: Add the Mayonnaise Slowly add the homemade mayonnaise to the beaten eggs. Stir constantly until you get a smooth mixture.
Step 3: Add Lemon Juice Grate the zest from all the lemons, then squeeze the juice and strain it. Pour the lemon juice into the bowl with the mixture and stir. Also, add the grated lemon zest and vanilla extract. Mix thoroughly again.
Step 4: Add the Dry Ingredients Mix the flour and other dry ingredients together, then gradually add them to the egg mixture. Keep mixing.
Step 5: Pour the Batter into the Pan Grease the pan with 15 ml of oil, then lightly dust with flour. Pour the cake batter into the prepared pan.
Step 6: Bake the Cake Place the pan in the oven and bake for 45-50 minutes.
Step 7: Cool the Cake After baking, remove the cakefrom the oven and let it cool for a few minutes. Then gently remove the cakefrom the pan and transfer it to a rack to cool completely.
Step 8: Decorate the Cake Drizzle the cooled cake with icing made from powdered sugar and lemon juice, then sprinkle with lemon zest.
