Lemon Bars on Whole Wheat Crust

Try out this recipe for delicious lemon bars on a whole wheat crust sweetened with honey!

Ingredients

Filling

  • Lemon – 1 pc.
  • Egg yolks – 1 pc.
  • Eggs – 4 pcs.
  • Cornstarch – 1 tablespoon
  • Honey – 160 g
  • Lemon juice – 125 ml

Crust

  • Egg – 1 pc.
  • Honey – 50 g
  • Rolled oats – 2 tablespoons
  • Salt – 1 pinch
  • Coconut oil – 55 g
  • Whole wheat flour – 130 g

Preparation

Step 1: Prepare the Crust

Pour coconut oil into a bowl. Add egg and honey. While stirring continuously, add whole wheat flour, rolled oats, and salt. Transfer the mixture into a baking dish lined with parchment paper. Spread it evenly. Place in an oven preheated to 180°C and bake for about 10 minutes.

Step 2: Prepare the Lemon Filling

Pour lemon juice into a bowl and add grated lemon zest. Add honey, eggs, and an additional egg yolk. Gently whisk the mixture. Add cornstarch and mix again. Pour the mixture onto the pre-baked crust. Bake for another 20-25 minutes – the filling should set.

Step 3: Decorate with Powdered Sugar

Remove the bars from the oven and let them cool. You can refrigerate them for about 4 hours to chill. Before serving, dust the top with powdered sugar sifted through a sieve. Cut into squares.
