Lego Cake

Turn your kitchen into a playful construction site with this Lego cake recipe! It’s a creative adventure that’s as much fun to build as it is to eat. With its colourful bricks and familiar shapes, this cake will be the centrepiece of any party.

Ingredients:

  • 4 x 600g white chocolate mud cakes, cooled
  • 2 pieces of liquorice
  • 1 liquorice ribbon
  • 1 red sour ribbon
  • 1 mini marshmallow
  • 200g packet of 3D gummy blocks
  • 750g room temperature butter
  • 1.35kg (9 cups) powdered sugar mix
  • 125ml (1/2 cup) milk
  • 3 teaspoons yellow liquid food colouring

Method:

In a large mixing bowl, beat the butter until pale and fluffy.

Gradually add the icing sugar mixture, beating well after each addition.

Slowly add the milk and continue to beat until the icing is light and creamy.

Add the yellow food colouring and mix until you have a bright Lego yellow colour.

Stack the cooled mud cakes on top of each other, using a layer of buttercream icing to hold them in place.

Cover the entire stack with a thin layer of buttercream icing to create a crumb coating. Chill in the fridge for about 30 minutes.

Cover the crumb coat with a second, thicker layer of buttercream icing, smoothing it out with a spatula or cake smoother.

Use the liquorice pieces and ribbon to create outlines and details on the cake, like Lego bricks.

Cut the red licorice ribbon to make additional decorations, such as the mouth of a Lego figure or other details.

Place the mini marshmallow on the cake as a small detail or as part of a Lego figure.

Arrange the 3D Gummy Blocks on the cake to resemble real Lego blocks.

Use any leftover buttercream to decorate or to stick more gummy blocks to the sides of the cake.
