Ingredients:
- 2 cups almond flour
- 8 tbsp butter, melted
- 1 tablespoon avocado oil (or coconut oil)
- 1/4 cup water
- 4 eggs, beaten
- 1 pinch of salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 2 tablespoons liquid sweetener of your choice
- extra butter to grease the griddle
Method:
In a large mixing bowl, whisk together the almond flour, baking powder, salt and liquid sweetener.
In another bowl, whisk together the melted butter, avocado oil, water, eggs and vanilla extract.
Pour the wet ingredients into the dry and stir until smooth.
Heat a griddle or non-stick pan over medium heat and grease with a little butter.
Drop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
