A sweet treat that has the power to summon childhood memories – ice cream sandwich!
Ingredients
- Candies – 40 g
- Walnut ice cream – 800 ml
- Dry wafer cakes – 50 g
Decoration
- Candies – 80 g
- Milk chocolate – 200 g
- Almonds, sliced – 50 g
- Pistachios – 50 g
Preparation
Step 1: Cutting out wafers Using cookie cutters, cut out 8 squares from the wafer cakes. Place the cutters on a board covered with baking paper and place one square cut out from the wafer at the bottom of each.
Step 2: Assemble ice cream sandwiches Place an equal amount of ice cream on each piece of wafer, add a few fruit dragees, and cover the ice cream with another wafer. Place the prepared sandwiches in the freezer for at least 2-3 hours until the ice mass solidifies.
Step 3: Prepare the decorations Finely chop the roasted pistachios and mix them with almonds on a plate or in a wide bowl. Melt the chocolate in a water bath and set aside for a moment to cool.
Tip! How to melt chocolate in a water bath: Place the chopped chocolate in a bowl and place it on a pot of boiling water. The steam heats the bottom of the bowl and melts the chocolate.
Step 4: Remove the ice cream sandwiches from the molds Remove the sandwiches from the freezer and gently run a knife along the sides of the molds to make it easier to remove them. Carefully remove the sandwiches from the molds.
Step 5: Decorate and serve the ice cream sandwiches Spread melted chocolate on each side of the sandwiches, then roll them in the mixture of pistachios and almonds. Transfer the remaining chocolate to a pastry bag and squeeze it on top of the ice cream sandwiches, drawing irregular patterns. Place fruit dragees on top of the prepared sandwiches.
