Bastani Irani (rose water and saffron ice cream)

If you want to enjoy the taste of fragrant ice cream, Bastani Irani is the best choice. This ice cream is usually served between two thin wafers, but it is also delicious on its own.

Ingredients:

  • 6 large egg yolks
  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 3/4 cup sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon finely ground saffron
  • 1/4 cup pure rosewater, preferably sadaf (see note)
  • 1/2 teaspoon pure vanilla extract
  • dried roses (for garnish)

Method:

In a medium saucepan over medium heat, whisk together the egg yolks, heavy cream, whole milk, sugar and salt. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10-12 minutes. Do not allow to boil.

Remove from the heat and stir in the finely ground saffron. Allow the mixture to cool slightly.

Stir in the rose water and vanilla extract until well combined.

Pour the mixture into an ice-cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.

Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.

Serve the Bastani Irani garnished with dried roses for a beautiful presentation.
