Neapolitan Brownie Ice Cream Sandwiches

With layers of strawberry, vanilla and chocolate ice cream sandwiched between rich, gooey brownies, this dessert is a feast for the senses. Enjoy the process of creating these indulgent treats.

Ingredients:

  • vegetable shortening (or oil to grease the pan)
  • 1 packet of fudge brownie mix (such as duncan hines double fudge – 1 packet contains 17.6 oz)
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 tablespoons water
  • 1tsp strawberry ice cream
  • 1 pint vanilla ice cream
  • 1 point chocolate ice cream

Method:

Preheat your oven to the temperature on the brownie mix packet. Grease a baking tin with vegetable shortening or oil. In a large bowl, combine the brownie mix, vegetable oil, eggs and water. Stir until well combined and pour into prepared pan.

Bake according to package instructions. Remove from the oven and allow to cool completely.

While the brownies are cooling, remove the strawberry ice cream from the freezer and allow to soften. Spread the softened strawberry ice cream over the cooled brownies and return to the freezer. Repeat with the vanilla and chocolate ice creams, making sure each layer is firm before adding the next.

When all the layers of ice cream have set, cut the brownies into squares to make sandwiches. Serve immediately or wrap each sandwich in cling film and store in the freezer.
