Healthy Paleo Snickers

This healthy Paleo Snickers recipe offers a guilt-free alternative to satisfying your sweet tooth, combining the classic flavours of caramel, peanuts and chocolate in a healthy and nutritious treat. Perfect as a snack or dessert without compromising on taste or quality ingredients!

Ingredients:

  • 2 tablespoons of coconut oil
  • 2 stoned Medjool dates
  • 1/2 cup (50g) raw cacao powder
  • 1 cup (90g) desiccated coconut
  • 240ml rice malt syrup
  • 400g tin chickpeas, rinsed and drained
  • 1/3 cup (95g) natural peanut butter (no added oil or sugar)
  • 2 teaspoons vanilla bean paste
  • 1 1/2 cups (225g) roasted salted peanuts
  • 40g unsalted butter or ghee
  • 200g dark chocolate, chopped (choose paleo-friendly chocolate if available)

Method:

Line a baking tin or tray with baking paper.

In a food processor, blend the coconut oil, Medjool dates, raw cacao powder and desiccated coconut until well combined and sticky.

Press the mixture evenly into the bottom of the lined cake tin to form a base layer. Place in the freezer to set while you prepare the next layer.

In the food processor (no need to clean after making the base) combine the rice malt syrup, chickpeas, natural peanut butter and vanilla bean paste. Blend until smooth and creamy, scraping down the sides as necessary.

Fold the roasted salted peanuts into the caramel mixture until evenly distributed.

Remove the cake base from the freezer. Spread the caramel and peanut mixture evenly over the cake base, smoothing over the top with a spatula.

Return to the freezer to set for at least 1 hour or until firm.

Melt the dark chocolate and unsalted butter (or ghee) in a heatproof bowl over a pan of simmering water (double boiler method), stirring until smooth and shiny.

Remove from the freezer and cut into bars or squares.

Dip each bar into the melted chocolate mixture, making sure it is completely coated. Place the coated bars on a baking sheet lined with greaseproof paper.

Place the bars in the fridge for about 30 minutes or until the chocolate coating has set.

Serve chilled and enjoy these healthy Paleo Snickers bars as a delicious treat!
