With their rich, creamy texture and irresistible flavour, Gooey Butter Cookies are perfect for sharing with friends and family or enjoying as a personal treat. They’re a testament to the magic that happens when butter, cream cheese and cake mix come together.
Ingredients:
- ¼ cup powdered sugar
- 1 (8 oz) package cream cheese, softened
- ½ cup unsalted butter, softened
- 1 large egg
- ¼ teaspoon vanilla extract
- 1 (15.25 ounce) package yellow cake mix
Method:
Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with baking paper.
In a mixing bowl, beat the cream cheese and butter until smooth and creamy.
Add the egg and vanilla extract and continue to beat until well combined.
Add the yellow cake mix little by little until the mixture is soft.
Chill the dough in the fridge for about 30 minutes to make it easier to work with.
Put the icing sugar in a small bowl.
Roll the cooled dough into tablespoon-sized balls, then roll each ball in the icing sugar to coat.
Place the sugar-coated balls on the prepared baking tray.
Bake for 10-12 minutes or until lightly golden around the edges.
Cool on the tray for a few minutes before transferring to a wire rack to cool completely.
