Ingredients:
- 3 1/4 cups all purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon sea salt
- 2 teaspoons vanilla extract
- 1 3/4 cups milk
- 8 oz. butter, softened
- 1 1/4 cups cane sugar (natural granulated)
- 4 large eggs, room temperature
Method:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake tins.
Whisk together the flour, baking powder and sea salt in a medium bowl.
In a large bowl, cream the softened butter and sugar until light and fluffy, about 5 minutes.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Pour the mixture evenly into the prepared tins.
Bake for 25-30 minutes or until a toothpick inserted in the centre comes out clean.
Cool the cakes in the racks for 10 minutes, then turn out onto wire racks to cool completely.
When cooled, frost if desired and decorate to celebrate the special occasion!
