Girl Scout Tagalongs, also known as Peanut Butter Patties, are iconic cookies loved for their irresistible combination of buttery shortbread, creamy peanut butter filling and rich chocolate coating. By recreating these beloved treats at home, you can indulge in their deliciousness all year round.

Ingredients:

For the cookies:

  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 3/4 cup (85g) icing sugar
  • 1 3/4 cups (210g) all-purpose flour, plus extra for surface
  • 1/2 teaspoon kosher salt

For the filling and frosting:

  • 1/2 cup (128g) creamy peanut butter
  • 1/3 cup (40g) powdered sugar
  • 2 cups semi-sweet chocolate chips

Equipment needed:

  • 1 3/4-inch round cookie cutter

Method:

Preheat the oven to 175°C (350°F). Line two baking sheets with baking paper.

In a large bowl, cream together the softened butter and icing sugar until light and fluffy.

Add the flour and salt to the butter mixture and mix well to form a dough.

On a lightly floured surface, roll out the dough to about 1/4 inch thick. Use a 1 3/4-inch round cookie cutter to cut circles from the dough. Place the circles on the prepared baking trays.

Bake in the preheated oven for 12-14 minutes or until the edges are lightly golden. Remove from the oven and cool completely on a wire rack.

In a small bowl, whisk together the creamy peanut butter and icing sugar until smooth and well combined.

When the cookies have cooled completely, spread about 1 teaspoon of the peanut butter filling on the flat side of half the cookies.

Place the remaining cookies on top of the filled cookies to make sandwiches.

Melt the semi-sweet chocolate chips in a microwave-safe bowl every 30 seconds, stirring occasionally, until smooth and fully melted.

Dip each sandwich cookie halfway into the melted chocolate, allowing any excess chocolate to drip off.

Place the dipped cookies on a parchment lined baking sheet and allow the chocolate to set at room temperature, or speed up the process by placing them in the refrigerator for about 30 minutes.

Once the chocolate is set, your homemade Girl Scout Tagalongs are ready to enjoy! Store any leftover cookies in an airtight container at room temperature.
