Ingredients

  • Flour 1.5 cups
  • Brown sugar 3/4 cup
  • Baking powder 1.5 teaspoons
  • Fine sea salt a pinch
  • Egg 1
  • Honey 3 tablespoons
  • Oil 1/3 cup
  • Whole milk (3.2%) 3/4 cup
  • Vanilla extract 2 teaspoons
  • Dark chocolate 75 grams
  • Heavy cream (30%) 3 tablespoons
  • Butter 1 teaspoon
  • Gingerbread spice for cakes and desserts 3/4 tablespoon
  • Baking soda 1/2 teaspoon

Preparation

  1. Sift the flour through a sieve. Add the remaining dry ingredients to the flour and mix.
  2. In another bowl, whisk the wet ingredients. Combine the wet ingredients with the dry ingredients, mixing briefly.
  3. Line a muffin tin with paper liners. Pour the batter into the liners, filling them up to 3/4 full.
  4. Bake the muffins at 180 degrees Celsius for about 20-22 minutes, or until a toothpick inserted into the center comes out clean. Melt the ingredients for the glaze in a double boiler. Pour the glaze over the cooled muffins. Decorate with sugar pearls.
