These ginger-marzipan bars make a wonderful warming and sweet gift for your loved ones!
Ingredients:
- Vanilla – 1.5 g
- Marzipan – 200 g
- White couverture chocolate – 25 g
- Dark couverture chocolate – 150 g
- Cognac – 1 tablespoon
- Candied ginger – 50 g
Preparation:
First, prepare the mixture. Finely chop the ginger and set aside 2 teaspoons. Knead the remaining ginger with marzipan, the pulp from the vanilla pod, and cognac. Roll out the mixture between 2 layers of baking paper to a thickness of about 1 cm. Cut into 18 strips.
Next, melt the chocolate. Chop the dark couverture chocolate and melt it in a double boiler. Coat the marzipan strips with the melted chocolate and place them on baking paper. Allow them to dry.
Finally, decorate the bars. Chop the white couverture chocolate and melt it in a hot water bath. Pour it into a piping bag or a freezer bag, seal the bag, and cut a small corner. Drizzle the chocolate over the bars and sprinkle with the reserved chopped ginger. Allow to dry completely and store in an airtight container.
