Giant Pancake Cake

Layered pancakes with a cottage cheese filling and thick chocolate glaze. An impressive way to serve a simple dish!

Ingredients

For Decoration

  • Banana – 0.5
  • Grapefruit – 0.5
  • Mandarin – 0.5
  • Orange – 0.5

Cottage Cheese Filling

  • Powdered sugar – 60 g
  • Eggs – 2
  • Vanilla-flavored homogenized cheese – 150 g
  • Full-fat cottage cheese – 275 g

Pancake Batter

  • Vanilla sugar – 2 packets
  • Eggs – 3
  • Cake flour – 200 g
  • Whole milk – 500 ml
  • Oil – 5 tablespoons
  • Salt – a pinch
  • Sparkling water – 100 ml
  • Raspberry jam – 220 g

Chocolate Glaze

  • Butter – 1 tablespoon
  • Cream (30%) – 100 ml
  • Dark chocolate – 100 g

Preparation

Pancakes Mix all the ingredients for the batter. Let the batter rest for 20-30 minutes, then fry pancakes on a small pan with a diameter of 17 cm.

Chocolate Glaze Heat the cream until boiling, then add chopped chocolate, stirring until the chocolate melts. Finally, add softened butter.

Cottage Cheese Filling Beat egg yolks with powdered sugar, gradually add cottage cheese and homogenized cheese. Mix until you get a smooth mixture.

Spread the pancakes with cottage cheese filling and raspberry jam alternately, stacking them to form a cake. Finally, pour chocolate glaze over the cake and decorate with fruits.
