Frozen Agua Fresca Ice Pops

This is a frozen version of the famous Mexican drink, AGUA FRESCA, made with cucumber.

Ingredients

  • Sugar, 1/4 cup
  • Water, 1/4 cup
  • Cucumbers, 500g
  • Ginger, 2cm piece
  • Lime or lemon juice, juice from 1 lime or lemon
  • Several mint leaves

Preparation

In a saucepan, heat the sugar with water, bring to a boil. Cook the resulting syrup for about 3 minutes, then remove from heat and let it cool.

Wash and peel the cucumbers. Peel the ginger and blend it together with the cucumbers and mint in a blender. Strain through a sieve into a clean container, such as a pitcher.

Add the sugar and water syrup (you can add it gradually starting with 3 tablespoons) and lime juice, mix well, and chill in the refrigerator. Fill ice pop molds with the chilled mixture and place in the freezer.
