Fluffy pancakes

Exceptionally light and delicate, yet filling and full of sweetness.

Ingredients

  • Natural yogurt – 350g
  • Vanilla sugar – 1 packet
  • Eggs – 2
  • Oil or melted butter – 3 tablespoons
  • Flour – 225g
  • Baking soda – 1 teaspoon
  • Baking powder – 1/2 teaspoon
  • Cooking fat (e.g., coconut oil)

Preparation

In a first bowl, roughly mix yogurt with vanilla sugar and eggs. Add oil or melted butter and mix again. In a second bowl, sift flour, add baking soda and baking powder, mix. Transfer dry ingredients to the bowl with wet ingredients (not vice versa!) and gently mix with a whisk until the ingredients are just combined into a uniform batter.

Heat a frying pan and lightly grease it. Spoon 2 tablespoons of batter for each pancake and fry for about 1 – 2 minutes until the pancakes are golden brown on the bottom. Flip to the other side using a spatula and repeat frying. Fry the remaining pancakes and serve with favorite toppings such as powdered sugar, jam, maple syrup, or whipped cream.
