The taste of a paradise island captured in delicious creamy ice creams combining refreshing pineapple with an exotic hint of ginger.
Ingredients:
- Sugar – 100 g
- Fresh ginger – 30 g
- Eggs – 3 pieces
- Grated lemon zest – 2 tablespoons
- Lemon juice – 50 ml
- Canned pineapple – 560 g
- Heavy cream (30%) – 200 g
Preparation:
Finely chop the ginger and lemon grass. Set aside 4 slices of pineapple, dice 2 slices finely, and blend the rest with 4 tablespoons of pineapple juice. Beat egg yolks and sugar until thick and pale. Mix the blended and diced pineapple, ginger, lemon zest, and lemon juice into the creamed mixture. Whip the cream until stiff peaks form, then fold it into the pineapple mixture. Transfer to an airtight container and freeze for at least 4 hours. During freezing, stir with a fork several times to break up the ice crystals.
Using an ice cream scoop, form balls and place them on the remaining pineapple slices. Decorate as desired with crystallized ginger and lemon zest.
