Ingredients:
- 1/2 cup (8 tbsp; 113g) unsalted butter
- 2/3 cup (130g) light or dark brown sugar, packed
- 3/4 cup (75g) almond flour
- 1/4 teaspoon salt
- 1 tablespoon (15ml) light or dark corn syrup or milk*.
- 1 teaspoon pure vanilla extract
- optional: 1/2 cup Nutella or melted chocolate (see note)
Method:
Preheat the oven to 177°C (350°F). Line baking trays with greaseproof paper.
Melt the butter and brown sugar in a saucepan over medium heat, stirring until smooth.
Remove from heat and stir in almond flour, salt, corn syrup or milk and vanilla extract.
Drop teaspoonfuls of the mixture onto the prepared trays, spacing well apart.
Bake for 6-8 minutes or until golden brown.
Cool on the trays for 5 minutes, then transfer to wire racks to cool completely.
Optional: When cooled, spread Nutella or melted chocolate on one side of each cookie.
