Easy birthday cake recipe

This recipe is all about simplicity, making it perfect for a stress-free celebration. You’ll have more time to enjoy the party! A homemade cake is a thoughtful gift that shows you care enough to put in the time and effort for someone special.

Ingredients:

  • 225g butter, softened
  • 225g golden icing sugar
  • 4 large eggs
  • 225g self raising flour
  • 3 tbsp whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • For the pink icing
  • 150g butter, very soft
  • 300g powdered sugar, sifted
  • Pink food colouring

Method:

Preheat the oven to 180°C (350°F) or 160°C (320°F) for fan ovens. Grease and line two 20cm round cake tins.

In a large bowl, cream the butter and golden icing sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Fold in the self-raising flour, milk and vanilla extract until smooth.

If you want a chocolate layer, take a third of the mixture and fold in the cocoa powder. Pour the vanilla mixture into one pan and the chocolate mixture into the other.

Bake for 20-25 minutes or until a skewer inserted in the centre comes out clean.

Leave the cakes to cool in the cake tins for a few minutes, then turn out onto a wire rack to cool completely.

To make the pink icing:

Cream the soft butter until smooth, then gradually add the icing sugar.

Add a small amount of pink food colouring and mix until you get the desired shade of pink.

Spread a layer of icing on the top of one cake, then place the second cake on top.

Use the rest of the icing to cover the top and sides of the cake.

Decorate with sprinkles or birthday candles.
