Doughnuts with ice cream and caramelized apples

Doughnuts with a hint of vanilla, filled with vanilla ice cream, served with caramelized apples – try this dessert that literally melts in your mouth!

Ingredients

Caramelized and flambéed apples

  • Sugar – 75 g
  • Butter – 5 g
  • Orange – 1 pc
  • Green apple – 3 pcs
  • Calvados – 60 ml

Doughnut dough

  • Sugar – 50 g
  • Fresh yeast – 25 g
  • Eggs – 4 pcs
  • Butter – 50 g
  • Milk – 120 ml
  • Oil – 1 liter
  • Vanilla – 3 g
  • Whiskey – 20 ml
  • Wheat flour – 300 g

Additionally

  • Raspberry – 120 g
  • Vanilla ice cream – 200 g

Preparation

Sift the flour into a bowl and make a well in the center. Cut the vanilla pod in half lengthwise. Scrape out the seeds with the back of a knife. Bring the milk to a boil with the vanilla seeds and the vanilla pod itself, then set aside to cool. Thoroughly dissolve the yeast with 2 teaspoons of sugar until smooth. Remove the cooked vanilla pod from the warm milk. Mix the milk thoroughly with the dissolved yeast. Pour the mixture into the flour, stir lightly, creating a sponge. Cover with a cloth and let it sit for about 15 minutes.

Melt the butter in the microwave or in a saucepan. Mix the risen sponge with the egg yolks, remaining sugar, a pinch of salt, and melted butter. Knead the dough until it begins to come away from your hands. Add the alcohol and a bit of flour and knead for a while longer. Dust the dough with flour, cover with a cloth, and let it rise.

Remove the risen dough from the bowl onto a floured surface. Knead and dust with flour. Form a roll from the dough, then divide it into 10-12 equal pieces. Shape each piece into a ball and place on a floured board. Cover with a cloth and let rest for 15-25 minutes. Alternatively, let the dough rise in an oven preheated to 30°C.

Fry the risen dough balls until golden brown in hot oil. Turn them several times to prevent burning. Drain the doughnuts on paper towels to remove excess oil.

Sprinkle sugar into a dry pan. Caramelize it without stirring, gently shaking the pan if necessary. Add a bit of orange juice and butter. Then add peeled apple slices to the pan. Sauté the apples on both sides until golden brown. Then pour in the alcohol and ignite it. Transfer the apples to a plate. Pour a little orange juice into the pan and heat briefly until a smooth sauce forms.

Fill the fried doughnuts with ice cream using a pastry bag. Serve with caramelized apples, raspberries, and sauce.
