Buttery cookies with a gooey caramel center
Ingredients
- Approximately 14 cookies
- 100g butter
- 7 “caramel candies”
- 1/2 cup powdered sugar
- 1 teaspoon vanilla sugar
- 1 egg
- 220g (1 and 1/3 cups) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
Preparation
Cut the butter into pieces and let it soften at room temperature. Cut the caramel candies in half and flatten them slightly. Line a large baking sheet with parchment paper. Preheat the oven to 180 degrees Celsius. Beat the butter into a light cream with powdered sugar and vanilla sugar (about 5 minutes).
Add the egg and continue beating for about 3 minutes. In a separate bowl, sift the flour and add the baking soda and baking powder, mix. Add to the creamed mixture and mix with a spatula. Divide the dough into 28 portions. Form patties, place half a caramel candy on one patty, and cover with another patty. Seal the edges and place on the prepared baking sheet. Bake in the preheated oven for about 13 – 14 minutes until the cookies are lightly golden on the bottom.
