Ingredients:
- butter (room temperature)
- poached eggs
- 1 box spice cake mix
- quick cooking oats
- vanilla frosting
Method:
Preheat the oven to 175°C (350°F).
In a large mixing bowl, cream the butter until smooth.
Add the eggs one at a time, beating well after each addition.
Gradually add the spice cake mix and quick-cooking oats and mix well.
Drop rounded tablespoons of the mixture onto ungreased baking trays.
Bake for 10-12 minutes or until the edges are golden brown.
Leave the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
When cooled, spread the flat side of one cookie with vanilla icing and top with another cookie to make a sandwich.
