This playful take on classic pizza is a sweet symphony of flavours, where rich, buttery cookie dough crust meets a cascade of melted dark chocolate, gooey marshmallows and fresh strawberries. It’s a treat that invites you to break the rules and indulge in the joy of dessert with a fun, shareable twist.
Ingredients:
- 185g butter, softened
- 185g golden caster sugar
- 150g soft light brown sugar
- 2 medium eggs, beaten
- 2 teaspoons vanilla extract
- 335g self-raising flour
- 1 teaspoon salt
- 200g chocolate chips
- 200g dark chocolate, melted
- 25g giant white chocolate buttons
- 25g mini marshmallows
- 25g strawberries, hulled and sliced
Method:
Preheat the oven to 180°C (350°F).
In a large bowl, cream together the softened butter, golden caster sugar and soft light brown sugar until light and fluffy.
Whisk in the eggs and vanilla extract.
Gradually stir in the self-raising flour and salt until a soft dough forms.
Fold in the chocolate chips.
Press the cookie dough into a round pizza tin or onto a baking sheet lined with greaseproof paper, forming a large circle about 1/2 inch thick.
Bake for 15-20 minutes or until golden brown.
Remove from the oven and allow to cool slightly.
Spread the melted dark chocolate as a ‘pizza sauce’ over the warm cake base.
Sprinkle the white chocolate buttons, mini marshmallows and sliced strawberries over the chocolate.
Return the cookie pizza to the oven for a further 5 minutes or until the marshmallows are slightly toasted.
Allow the cookie pizza to cool for a few minutes before slicing.
Serve warm or at room temperature for a delicious treat.
