Ingredients:
- 1 cup (2 sticks) unsalted butter, melted and cooled
- 1 cup (215g) packaged light brown sugar
- 1 teaspoon pure vanilla extract
- 2 cups (240g) all purpose flour
- 1/2 teaspoon kosher salt
- 1/2 cup semi-sweet chocolate chips
Method:
Preheat the oven to 175°C (350°F).
Line a baking sheet with parchment paper or silicone baking mat.
In a large mixing bowl, combine the melted and cooled butter, light brown sugar and vanilla extract. Stir until well combined.
Add the flour and kosher salt to the butter mixture. Stir until dough forms.
Fold in the semi-sweet chocolate chips until evenly distributed.
Transfer the mixture to the prepared baking tray.
Using a spatula or your hands, spread the dough into an even layer about 1/4 inch thick.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the centre has set.
Allow the biscuits to cool completely on the baking sheet.
When cooled, break the cookie brittle into irregular pieces.
