Ingredients
- Flour, 1 and 1/3 cups
- Salt, 1/2 tsp
- Unsalted butter, 110 g
- Sugar, 1/2 cup
- Egg (small or 1/2 large), 1
- Vanilla extract, 1/2 tsp
- Jam (three different types with a smooth consistency, e.g., cherry, black currant, fig, or optionally: strawberry, peach, raspberry), 1 tbsp each
Preparation
Sift the flour and mix with salt. Cream the butter with sugar using a mixer until fluffy and white (about 5 minutes). Add the egg and vanilla, and beat together for another 3 minutes until the mixture is fluffy again. Reduce the mixer speed to low and add the flour in 3 parts. Once the ingredients are combined, remove the dough and flatten it into a disc about 15 cm in diameter. If the dough is very sticky, you can add a bit more flour. Wrap in plastic wrap and refrigerate for an hour.
Preheat the oven to 180°C. Scoop the dough with a teaspoon and form balls, then slightly flatten them to about 2.5 cm in width and 1 cm in height. Arrange them in groups of three on a baking sheet lined with parchment paper, so they touch each other at the sides. During baking, the dough will spread slightly, making the cookies wider.
Make an indentation in each ball with the end of a wooden spoon or a small finger, and fill it with a bit of jam (at the tip of a teaspoon). Use three different jams in each group of three cookies. Bake for 15-20 minutes in the middle of the oven until the edges of the cookies are lightly browned.
