A snack that’s hard to resist! These coconut waffles are a delectable dessert that any restaurant would be proud to serve. With this simple recipe, you can make them yourself at home.

Ingredients:

  • Coconut milk (1 can, 400 ml)
  • Rice flour (170 g or 1 cup + 4 tablespoons)
  • Baking powder (1 ½ teaspoons)
  • Vanilla extract (1 teaspoon)
  • Sugar (4 tablespoons)
  • Salt (a pinch)
  • Eggs (2)

Optional:

  • Shredded coconut (2 tablespoons)
  • Coconut oil (3 tablespoons)
  • Coconut liqueur (1 tablespoon)

To Serve:

  • Fresh strawberries
  • Coconut cream
  • Powdered sugar
  • Strawberry jam

Instructions:

  1. Prepare the Coconut Milk: Gently heat the coconut milk until it becomes liquid. Pour it into a bowl and let it cool slightly if necessary.
  2. Make the Batter: Add the egg yolks to the coconut milk. Sift in the rice flour mixed with the baking powder. Add the vanilla extract and, if using, the shredded coconut, coconut oil, and coconut liqueur. Mix everything together with a hand mixer until you have a smooth batter. Let the batter rest for 30 minutes.
  3. Whip the Egg Whites: In a separate bowl, beat the egg whites with the sugar and a pinch of salt until stiff peaks form.
  4. Combine the Mixtures: Gently fold the whipped egg whites into the coconut batter until well combined.
  5. Cook the Waffles: Preheat your waffle iron and lightly grease it if necessary. Pour the batter onto the hot waffle iron and cook for about 3 minutes on each side, or until the waffles are golden and crisp.
  6. Serve: Dust the waffles with powdered sugar and serve with fresh strawberries, coconut cream, and strawberry jam.
