Coconut Jumbo Oat Granola is a delicious and nutritious way to start the day or enjoy as a snack. This recipe combines the tropical flavour of coconut with the hearty texture of jumbo oats and the nuttiness of almonds, pistachios and pecans.
Ingredients:
- 100g flamed or jumbo raisins
- 50g almonds, roughly chopped
- 50g pistachios, roughly chopped
- 50g pecans, roughly chopped
- 250g jumbo oats
- 25g pumpkin seeds
- 25g chia seeds
- 4 tbsp coconut oil
- 5 tbsp maple syrup
- 1 tsp ground cinnamon
- 1 tsp vanilla bean paste
- 4 tbsp water
- 1/2 tsp sea salt flakes
- 50g desiccated coconut
To serve (per person):
- 1 nectarine, peach or apricot, halved and stone removed
- 1 tsp unsalted butter, melted
- 150g Greek yoghurt
- Edible flowers (optional)
Method:
Preheat the oven to 300°F (150°C) and line a large baking tray with baking paper.
In a large bowl, mix together the oats, almonds, pistachios, pecans, pumpkin seeds and chia seeds.
In a small saucepan, gently heat the coconut oil, maple syrup, ground cinnamon, vanilla bean paste, water and sea salt until combined.
Pour the liquid mixture into the dry ingredients and stir until everything is well coated.
Spread the mixture evenly on the baking tray.
Bake for 45-50 minutes, stirring every 15 minutes, until golden and crispy.
Remove from the oven and leave to cool completely. When cool, stir in the raisins and coconut flakes.
To serve, grill the fruit halves in a little melted butter until caramelised.
Serve the granola with the grilled fruit and a dollop of Greek yoghurt. Garnish with edible flowers if desired.
