Coconut Ice Cream with Green Tea

This ice cream can be made using any method: in an ice cream maker, in single ice pop molds, or simply by chilling the mixture in the freezer.

Ingredients

  • 1 can of coconut milk (400g) or almond milk, condensed cow’s milk, or heavy cream
  • 1/3 cup water
  • 1/2 cup sugar
  • 2 teaspoons Japanese green tea powder (such as matcha or gyokuro)
  • Juice from 1 lime

Preparation

Chill the coconut milk in the refrigerator (you can do this a day in advance). In a saucepan or metal cup, pour water, add sugar, and mix. Bring to a boil, then cook for an additional 3 minutes. Remove from heat and let it cool. Add the matcha and stir until completely dissolved. Mix with the coconut milk and lime juice. Chill thoroughly in the refrigerator.
