Ingredients:
- 6 cups chopped, peeled tart apples
- 2 cups all purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 cup packed brown sugar
- 3/4 cup butter (1/2 cup softened + 1/4 cup cubed)
- 1/2 cup heavy whipping cream
- 2 large eggs, room temperature
- 2 cups granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
Method:
Preheat the oven:
Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together 2 cups flour, 1/2 teaspoon cinnamon, 1 teaspoon nutmeg, 1/2 teaspoon baking soda and 1/2 teaspoon salt. Set aside.
In a large bowl, cream together 1/2 cup softened butter and 2 cups sugar until light and fluffy. Beat in 2 eggs, one at a time, then stir in 1/2 teaspoon vanilla extract.
Gradually add the dry ingredients to the cream mixture, beating just until incorporated.
Fold in the 6 cups of chopped apples. The dough will be very thick.
Pour the batter evenly into the prepared baking tin.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the centre comes out clean.
While the cake is baking, make the topping by combining 1/2 cup packaged brown sugar, 1/4 cup diced butter and 1/2 cup heavy whipping cream in a small saucepan. Bring to a boil over medium heat, stirring constantly. Cook for 3 minutes.
Pour the topping over the warm cake as soon as it comes out of the oven.
Allow the cake to cool slightly before serving. Serve hot or at room temperature.
