Fluffy and quick chocolate pancakes made with yogurt.
Ingredients
- 250 g natural yogurt
- 2 eggs
- 1 packet vanilla sugar
- 1 tbsp sugar (optional)
- 170 g all-purpose flour
- 1 tbsp cocoa powder
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- Butter or oil for greasing the pan
- For serving: powdered sugar, maple syrup, fruits, jam
Preparation
- Take the yogurt and eggs out of the fridge in advance to warm up (or gently heat them in a water bath or microwave).
- Mix yogurt with eggs, vanilla sugar, and sugar using a whisk or fork.
- In another bowl, sift together flour, cocoa powder, baking powder, and baking soda, and mix well.
- Add the wet ingredients to the dry ingredients and mix with a whisk or gently mix with a mixer until just combined into a smooth batter (do not overmix, just until the ingredients are combined).
- Heat a frying pan (preferably a large one for pancakes or one with a non-stick coating), grease it with butter or oil, and ladle about 2 tablespoons of batter for each pancake, keeping some distance between them (maximum of 4 pancakes at a time).
- Fry over medium-low heat until they rise and are nicely browned, about 3 minutes. Flip the pancakes and fry until browned on the other side, about 3 minutes on moderate heat.
- Sprinkle with powdered sugar and serve with maple syrup, jam, or fruits.
