Chocolate Pancakes

Chocolate Pancakes

Fluffy and quick chocolate pancakes made with yogurt.

Ingredients

  • 250 g natural yogurt
  • 2 eggs
  • 1 packet vanilla sugar
  • 1 tbsp sugar (optional)
  • 170 g all-purpose flour
  • 1 tbsp cocoa powder
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • Butter or oil for greasing the pan
  • For serving: powdered sugar, maple syrup, fruits, jam

Preparation

  1. Take the yogurt and eggs out of the fridge in advance to warm up (or gently heat them in a water bath or microwave).
  2. Mix yogurt with eggs, vanilla sugar, and sugar using a whisk or fork.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and baking soda, and mix well.
  4. Add the wet ingredients to the dry ingredients and mix with a whisk or gently mix with a mixer until just combined into a smooth batter (do not overmix, just until the ingredients are combined).
  5. Heat a frying pan (preferably a large one for pancakes or one with a non-stick coating), grease it with butter or oil, and ladle about 2 tablespoons of batter for each pancake, keeping some distance between them (maximum of 4 pancakes at a time).
  6. Fry over medium-low heat until they rise and are nicely browned, about 3 minutes. Flip the pancakes and fry until browned on the other side, about 3 minutes on moderate heat.
  7. Sprinkle with powdered sugar and serve with maple syrup, jam, or fruits.
