Ingredients:

  • nonstick cooking spray
  • 6 oz. bittersweet chocolate, finely chopped
  • 1/2 cup (115g) unsalted butter
  • 1/3 cup (67g) granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (31g) all purpose flour
  • 1/8 teaspoon salt

Method:

Preheat the oven to 218°C (425°F). Spray four 6oz ramekins with nonstick cooking spray and place on a baking sheet.

Melt the chocolate and butter together. You can do this in a double boiler or in the microwave in 20-second increments, stirring after each, until smooth.

Whisk together the granulated sugar, eggs and yolks until well combined. Then fold in the melted chocolate and vanilla extract.

Sift the flour and salt into the chocolate mixture and fold in until just combined.

Pour the mixture evenly into the baking trays.

Bake for 12-14 minutes, or until the edges look firm but the centre is still soft.

Allow the cakes to rest for 1 minute, then cover each cake tin with an inverted plate and turn over to release the cake.

Serve immediately, perhaps with a dusting of icing sugar, a scoop of vanilla ice cream or fresh berries for a special touch.
