Chocolate Hazelnut Ice Cream Sandwich

Enjoy a blend of creamy chocolate and salted caramel ice cream sandwiched between rich double chocolate biscuits and sprinkled with crunchy toasted hazelnuts. These Chocolate Hazelnut Ice Cream Sandwiches are a quick, heavenly treat that’s sure to delight!

Ingredients:

  • 2 scoops of softened chocolate and salted caramel ice cream
  • 4 double chocolate biscuits
  • 2 handfuls of hazelnuts, toasted and chopped
  • Ultimate Vanilla Ice Cream (as an alternative)

Method:

Preheat the oven to 175°C (350°F).

Spread the hazelnuts on a baking tray and roast for about 10-15 minutes, until they’re golden and fragrant.

When cool, rub the hazelnuts in a clean tea towel to remove as much of the shell as possible.

Roughly chop the hazelnuts and set aside.

Place the double chocolate biscuits on a flat surface.

Place a scoop of the softened chocolate and salted caramel ice cream on each biscuit.

Sprinkle the toasted and chopped hazelnuts over the ice cream.

If you’re using vanilla ice cream, consider mixing in some chopped hazelnuts or chocolate chips to add texture and flavour.

Top with the remaining biscuits to make sandwiches.

Carefully transfer the ice cream sandwiches to a baking sheet lined with greaseproof paper.

Place the baking sheet in the freezer and freeze the sandwiches until the ice cream has set, about 1-2 hours.

Once the ice cream has set, you can serve the sandwiches immediately.

For an extra touch, roll the edges of the ice cream sandwiches in extra chopped hazelnuts before serving.
