Chocolate Egg with Vanilla Mousse Filling

This vanilla mousse and peach sauce hidden in a chocolate shell looks just like a real egg! See how to prepare the perfect dessert for Easter!

Ingredients

Vanilla mousse

  • White chocolate – 100 g
  • Sugar – 20 g
  • Eggs – 2 pcs.
  • Vanilla – 3 g
  • Water – 20 ml
  • 30% cream – 200 ml

Chocolate shells

  • White chocolate – 300 g

Peach sauce

  • Lemon – 1 pc.
  • Peach in syrup – 150 g
  • Amaretto liqueur – 20 ml

Preparation

Step 1: Preparing the Chocolate Shells Melt and temper the chocolate. Pour into egg-shaped molds and spread the chocolate evenly to ensure uniform thickness of the shells. Place in the refrigerator to set.

Step 2: Combining the Ingredients for the Vanilla Mousse Bring water with sugar and vanilla seeds to a boil. Break the egg yolks into a saucepan or bowl for whisking over steam. Add the sugar syrup to the egg yolks and mix. Whisk over steam until creamy. Remove from heat and add the crushed chocolate, whisking again over steam. Allow to cool and combine with whipped cream. Chill the mousse in the refrigerator.

Step 3: Blending the Peach Sauce Blend the peaches with a few drops of lemon juice and amaretto liqueur. Make holes in the chocolate shells and place them in egg cups. Transfer the vanilla mousse to a piping bag and pipe it into the chocolate shells. Chill in the refrigerator for about 30 minutes; a few minutes before serving, you can transfer them to the freezer. Shape a cone out of parchment paper and fill it with peach sauce. Pipe the sauce into the chocolate shells with the mousse.
