Inside each glossy, chocolate-covered date lies a heart of creamy peanut butter, adding a layer of nutty richness that complements the caramel-like flavour of the fruit.

Ingredients:

  • Pitted Medjool dates
  • Creamy peanut butter
  • Dark chocolate baking bar (60% cacao)
  • Sea salt (optional)

Method:

Carefully slit the Medjool dates on one side and remove any pits if they are not already pitted.

Spoon a small tablespoon of creamy peanut butter into the centre of each date.

Melt the dark chocolate in a microwave-safe bowl for 30 seconds, stirring occasionally, until smooth.

Dip the peanut butter coated dates into the melted chocolate, making sure they are well coated.

Place the chocolate coated dates on a baking sheet lined with greaseproof paper.

If you like, sprinkle a tiny pinch of sea salt over the chocolate while it’s still melted.

Refrigerate the dates for about 30 minutes or until the chocolate has set.
