Chocolate Chip Pancakes

Each fluffy pancake is sprinkled with rich, melty chocolate chips for the perfect balance of sweet and savoury. Ideal for lazy weekend mornings or when you want to treat yourself, these pancakes are guaranteed to bring a smile to the breakfast table.

Ingredients:

  • 1 cup all purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup chocolate milk
  • 2 tablespoons canola oil
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini semi-sweet chocolate chips
  • Optional: Maple syrup and butter to serve

Method:

In a large bowl, whisk together the flour, sugar, baking powder and salt.

In a separate bowl, beat the egg, then add the chocolate milk, canola oil and vanilla extract and mix well.

Pour the wet ingredients into the dry and stir until just combined. Take care not to overmix.

Fold in the chocolate chips.

Heat a nonstick skillet or griddle over medium heat and lightly grease with oil or butter.

Add 1/4 cup of the batter to the pan and cook until bubbles appear on the surface and the edges are set, about 2 minutes.

Flip the pancakes and cook until the other side is golden brown, about 1-2 minutes more.

Serve hot with optional maple syrup and butter.
