A delicious recipe for a cheesecake with a chocolate flavor.
Ingredients
- Butter – 200 g
- Sugar – 150 g
- Almonds – 100 g
- All-purpose flour – 270 g
- Cocoa powder – 40 g
- Dark chocolate – 50 g
Cheesecake filling
- Ground cottage cheese – 1 kg
- Eggs – 5
- Dark chocolate – 350 g
- Butter – 80 g
- Sugar – 200 g
- Cocoa powder – 25 g
- Potato starch – 40 g
- Heavy cream (30%) – 150 ml
- Lime – 1
Topping
- Heavy cream (30%) – 50 ml
- Dark chocolate – 100 g
- Butter – 20 g
Preparation
Step 1: Prepare the Crumble Sift flour together with cocoa powder into a bowl. Add sugar and diced butter. Knead the crumble until small pieces of dough are formed. Finally, add diced almonds and crushed chocolate. Mix well.
Step 2: Bake the Crumble Grease a baking dish with butter and lightly dust with flour. Spread half of the crumble evenly on the bottom of the dish. Spread the remaining crumble evenly on a baking sheet lined with parchment paper.
Place the baking dish in an oven preheated to 180°C on the upper level and the baking sheet with crumble on the lower level. Bake for about 30 minutes. After 20 minutes, mix the crumble on the baking sheet and bake for another 10 minutes. Remove both trays from the oven and let them cool.
Step 3: Add Lime Zest to the Cheesecake Filling Combine cottage cheese, eggs, butter, and heavy cream at room temperature. Mix the cottage cheese with potato starch, cocoa powder, and sugar using a mixer. Add the heavy cream. Melt the butter in a saucepan with dark chocolate. Gradually add the eggs to the mixture, stirring constantly. Once the ingredients are well combined, add the melted chocolate with butter – mix thoroughly. Add the zest from the lime and its juice.
Step 4: Bake the Cheesecake Pour the mixture into the baking dish with the cooled crumble. Place it in an oven preheated to 160°C, with two trays filled with water inside. Place one tray on the upper level. Place the baking dish with the cheesecake in the second tray so that water does not get into the cake. Bake for about 60-70 minutes. Remove the cheesecake from the oven and let it cool.
Step 5: Sprinkle the Cake with Crumble Boil the heavy cream. Add the crushed chocolate, mix well. Finally, add the softened butter. Pour the topping over the cooled cheesecake, then sprinkle with the crumble.
