How to make brownie cookies? With this simple recipe, you’ll create the perfect dessert that melts in your mouth.

- Butter, 60 g
- Chocolate (semi-sweet, 50% cocoa or dark, around 60% cocoa), 200 g
- Eggs, 2
- Sugar, 150 g
- Wheat flour, 50 g
- Baking powder, 1/4 teaspoon
Nut cream
- Mascarpone, 125 g
- Peanut butter (or nutella or dulce de leche), 100 g
- Powdered sugar, 4 tablespoons
Preparation
Cookies Place the diced butter in a pot and start heating over low heat. When it is halfway melted, add 150 g of chocolate broken into small pieces and melt while stirring. Remove from heat.
Preheat the oven to 180°C. Beat the eggs with the sugar for about 5-7 minutes until a fluffy mixture forms.
Add the chocolate mixture to the eggs and mix until smooth. Add the flour and baking powder, and mix again.
Add the remaining 50 g of chocolate chopped into small pieces, and chopped nuts if using. Mix and place in the freezer for 10 minutes.
Line a large baking sheet with parchment paper.
Scoop a tablespoon of dough and place it on the baking sheet, leaving some space between each cookie. Bake for 10 minutes. When removing from the oven, the cookies should be soft in the center, they will harden as they cool.
Nut cream Place mascarpone and peanut butter (or nutella or dulce de leche) in a bowl and beat together for about 3 minutes until smooth and fluffy. If using peanut butter, add powdered sugar while beating (skip the sugar if using dulce de leche or nutella as they are already sweet enough).
Cool the cookies completely, then sandwich them together with the cream, placing the filling between two cookies.
