Chocolate-Banana Cheesecake

Chocolate-Banana Cheesecake

A delicious chocolate-banana dessert is a different version of the classic cheesecake and a sweet moment of indulgence.

Ingredients

  • Banana: 500 g
  • Powdered sugar: 220 g
  • Vanilla sugar: 1 packet
  • Eggs: 3
  • Cocoa powder: 1 teaspoon
  • Butter: 95 g
  • Mascarpone cheese: 300 g
  • Salt: a pinch
  • Wheat flour: 120 g
  • Ground cheesecake curd: 300 g
  • Dark chocolate: 125 g

For decoration

  • Banana: 25 g

Preparation

Step 1: Prepare the crust

  • Cut 80 g of butter into cubes and combine with 60 g of powdered sugar, salt, flour, and cocoa. Add the egg yolk and knead into a smooth dough. If the dough is not sticky, add 1-2 tablespoons of cold water. Grease a cake pan and line it with parchment paper. Line the cake pan with the dough, prick with a fork, and refrigerate for 1 hour. After chilling, cover with parchment paper and weigh down with pie weights or ceramic baking beans.

Step 2: Bake the crust

  • Bake in an oven preheated to 200°C for about 10 minutes. Remove the paper and weights and bake for another 3 minutes. Remove from the oven and let it cool for a while. Reduce the oven temperature to 170°C.

Step 3: Make the cheesecake filling

  • Mix the ground cheesecake curd, mascarpone cheese, eggs, remaining powdered sugar, and vanilla sugar. Peel and dice the bananas, then add them to the mixture. Mix well. Pour the mixture onto the pre-baked crust and bake for about 35 minutes, until set. Leave in the turned-off oven for 5 minutes, then remove and cool on a rack.

Step 4: Decorate the cheesecake

  • Remove the cheesecake from the pan. Coarsely chop the bananas. Chop the chocolate and melt with the remaining butter in a water bath. Let it cool, then pour a thin layer over the cheesecake. Sprinkle with bananas and refrigerate until set.

Tip: The cheesecake tastes especially good when left in a cool place for a day to allow the flavors to meld.
