Pancakes in their most traditional form.
Ingredients
Pancakes
- all-purpose flour, 1 cup
- sugar, 1 tablespoon
- salt, a pinch
- milk, 1 cup
- mineral water, 3/4 cup
- eggs, 2
- vegetable oil or melted butter, 4 tablespoons
Filling
- full-fat cottage cheese, 450 g
- powdered sugar, 2 tablespoons
- vanilla sugar, 1 tablespoon
Preparation
In a bowl, combine the flour, sugar, and salt. Add the milk and water, and mix with a whisk or mixer until smooth. Add the eggs and mix again. Let the batter rest for 15 minutes or while preparing the filling. Before frying, add the oil or melted butter to the batter and mix.
Heat a frying pan (preferably a pancake pan) and pour a portion of the batter using a ladle. Spread the batter over the surface of the pan and fry until the bottom is lightly browned. Flip with a spatula and fry the other side.
Filling
Place the cottage cheese in a bowl, add the powdered sugar and vanilla sugar, and mash with a fork until well mixed. Spread the filling on the pancakes and fold them into triangles or rolls. Heat the filled pancakes on a pan.
Serving Suggestion
Serve with powdered sugar or maple syrup and seasonal fruits such as strawberries, raspberries, or blueberries. Optionally, add sweetened cream.
