Champagne Dessert

Sparkling white wine can be a great base for preparing a champagne jelly. Add fluffy strawberry mousse, and you’ve got yourself a wonderful dessert!

Ingredients

Jelly

  • Sparkling wine, 750 ml
  • Powdered sugar, 40 g
  • Gelatin, 4 teaspoons

Strawberry Mousse

  • Water, 20 ml
  • Gelatin, 1 teaspoon
  • Heavy cream (30%), 200 ml
  • Strawberries, 400 g
  • Powdered sugar, 60 g
  • Lemon juice, 2 tablespoons

Decoration

  • Fresh mint, 10 g
  • Chocolate sticks, 10 g
  • Strawberries, 30 g

Preparation

Step 1: Prepare the Jelly Soak gelatin (4 teaspoons) in 100 ml of sparkling wine. Mix and then dissolve in the microwave (there should be no lumps in the gelatin). Pour the gelatin into a bowl, add powdered sugar, mix thoroughly, and gradually add the remaining sparkling wine while stirring continuously.

Step 2: Pour the Jelly into Glasses Place 2-3 strawberries at the bottom of each glass. Pour the gelatin mixture with sparkling wine into the glasses. Place the prepared glasses with jelly in the refrigerator to set.

Step 4: Prepare the Strawberry Mousse Whip the heavy cream. Blend the remaining strawberries. Soak gelatin in 20 ml of water, then dissolve it in the microwave. Combine blended strawberries with powdered sugar and lemon juice. Mix well. Add gelatin and mix again. Let it sit for a few moments. Once the mousse begins to gel, fold it into the whipped cream.

Step 5: Combine the Mousse with the Jelly Spread the mousse over the set jelly in the glasses. Return to the refrigerator for about an hour.

Step 6: Decorate the Dessert Decorate with chocolate sticks, fruit, and mint or lemon balm leaves.
