Soft chewy caramels

Made with butter, brown sugar, sweetened condensed milk and dark corn syrup, these caramels are a melt-in-your-mouth treat. Enjoy the process of making these sweet treats from scratch.

Ingredients:

  • 1 tablespoon plus 1 cup unsalted butter, divided
  • 2-1/4 cups packaged brown sugar
  • 1 14 oz. can sweetened condensed milk
  • 1 cup dark corn syrup

Method:

Grease a 9-inch square pan with 1 tablespoon butter.

In a heavy saucepan, combine the sugar, corn syrup, remaining butter and half the milk. Cook over medium heat until sugar is dissolved.

Gradually add the remaining milk. Cook, stirring frequently, until a candy thermometer registers 248 degrees (firm ball stage). This should take about 30 minutes.

Immediately pour into the prepared pan (do not scrape the pan). Leave to set for about 5 hours or overnight.

Cut the fudge into 1 inch squares. Wrap each piece individually in waxed paper, twisting the ends.
